Recently, production and consumption of dairy product with potential health benefits has been raising steadily, partially because of its good nutritional value and healthy effects. Recently market studies have shown an increasing demand for functional dairy products that contain live probiotic. So, functional dairy products had attention of microbiologist, nutritionist and manufactures for creation of healthy dairy products in national market. Dairy products containing probiotc "live microorganisms which when administrated in adequate amounts confer a health benefit on the host" are currently among the best known functional foods associated with a range of health claims in developed countries. Dairy products provide the ideal food system for the delivery of these beneficial bacteria to human gut, given the suitable environment probiotcs provide to promote growth and supporting viability of these cultures with the use of some prebiotics "non digestible food ingredients that stimulate the growth and activity of intestinal microflora" to produced dairy products contain high viable active probiotics and suitable ratio of prebiotics called synbiotics that have many functional effects.
